Baohaus on Urbanspoon
The chef owner of Baohaus has been getting a ton of press lately from being featured on a Bourdain show, having his own show, and to guest blogging appearances on eater.com.  He comes off more as a pot-smoking, urban rap star than as a chef but you need only to stop by Baohaus in the East Village to know that he's created something that you will crave at any time of the day.

We stopped by Baohaus during an informal pub crawl on the Saturday of Santa Con in NYC.  We were looking for bars that weren't full of drunk Santas, elves and various other holiday creations.  Naturally, we need fuel to keep us going and Baohaus was a natural pit stop.   I had to order the Chairman Bao since I'm a sucker for pork belly (who isn't?) and my buddy had the Adobo Bao.  The pork belly was tender, succulent and sweet while the peanuts and cilantro added just the right amount of crunch/bite and texture.  You no doubt would want to compare the buns to Momofuku but its almost comparing apples to oranges.  Momofuku takes a more refined approached to its buns and almost transforms them into something different.  Baohaus stays true to the Bao concept and adds little twists to it.  Both are done successfully and both are well worth going back to over and over again.
